Chicken Fried Rice

Another option to use the chicken from my earlier post.

Ingredients
Chicken - I only had about 1/2-3/4 left but you can use more if you like
Chopped vegetables - I used about 1/3 cup broccoli, shredded carrots, spouts, 1/3 cup mushrooms, 1/3 cup onions
2 servings of rice
Marinade: 1 TB soy sauce, 1/2 TB guk kan jang (soy sauce for soups), 1 TB sesame oil, 1 TB minced garlic, dash of pepper

I took out the rest of the chicken (from my earlier post) and vegetables.



I decided to use my stainless steel wok.  I have the all clad one - I learned that you have to let it heat up for like 3 minutes.  If you start to cook too quickly the pan will turn brown - so let it heat up and then cook!

I started with the broccoli, carrots and onions


I decided to cook some salmon to eat with the rice (optional).  I learned the trick is to just leave it on the stove and don't touch it! I cooked about 1 pound - 8 minutes on each side eventually



Make sure to watch your wok and keep mixing so nothing burns - I had mine on medium heat.  Then put together the marinade ingredients



I have a lot of rice just frozen for every day use! I de frosted it while waiting for the rest to cook



Once the onions start to turn a little brown and the vegetables are about 75% cooked, add the rest

Mix it around


Cook for about 2 minutes then add your rice


Stir for about a minute. Then add the marinade


Mix around



Mix around for another 3-4 minutes.  Taste it to see if you like it - I made mine more on the "light" side - so add more soy sauce if you want more flavor

Then plate and enjoy



We only plate a little at a time otherwise we eat really fast ha.  On a side note, this sauce from Whole Foods is DELISH with salmon!

Mackerel #2

Another mackerel recipe - it's more a grilled type

Marinade: 4 TB soy sauce, 2 TB gochukaru, 2 TB mulyut / corn syrup, 3 TB chopped scallions, 1.b TB minced garlic, some ginger powder, 2 TB rice wine, 1 TB sesame seeds, dash of sesame oil, 1 TP pepper

1 pound of mackerel (i used spanish mackerel)
olive oil for cooking

Mix marinade together in a bowl




Set aside.  Wash your fish and then pat it dry with a paper towel.  Cut it into smaller pieces and mix with the marinade




Let it marinade at least 30 minutes in the fridge.  I covered it up - I did this the night before for dinner the next day



When you are ready heat the pan with some oil





Add the mackerel and cook on medium heat. Flip over to get both sides


You can add sliced potatoes too if you like.  Then plate and serve


Fish Tacos

I found this recipe somewhere awhile ago and I cannot remember where! But I atleast wanted to share it since it's pretty yummy

1 pound of fish - i used Mahi Mahi (red snapper also works)
Marinade: 1/4 canola oil, 1 lime, juice squeezed out, 1 TB chili powder, 1 chopped jalapeno, 1/4 chopped cilantro
tortillas
optional: salsa, guacamole, cheese, spanish rice

Mix the marinade ingredients together in a bowl.  Set it aside and now you have to get the fish ready.


I usually ask them to cut the skin off of the fish for me at the market, but I forgot this time so I had to (not fun!)





Cut it into small pieces and then mix together with the marinade




You can prepare it the day before and leave it in the fridge for dinner the next day.  I made this in the morning for lunch so it's a smaller portion then I would make for dinner


Make sure it marinades at least 30 minutes

When you are ready, you can cook it on the stove with some olive oil



Pop some tortillas in the oven or microwave - whatever you prefer! I had some shredded cheese and salsa in small bowls too






Normally I would make spanish rice and guacamole too but since this was for lunch and not dinner we kept it simple

Simple Fish (Sea Bass)

Ingredients
1 lb sea bass
1 tablespoon minced garlic
Sliced garlic
Sliced onions and mushrooms
Potatoes optional
Olive oil
Salt and pepper

This is just a really quick way to cook fish for fast dinner..

Clean the fish under cold water, and then pat it dry with a paper towel.  Sprinkle on salt and pepper


Heat up your pan with some olive oil and then add the garlic





Add the fish



And onions



And then I forgot to finish taking pictures ha! But I added some more olive oil, and then the mushrooms.... you can add potatoes as well if you want.. then plate and serve... 

it's a good dish you can pair with other foods... maybe even grill some yummy gogi and eat together!

Mackerel JoRim 고등어 조림

It's been awhile. I need to update this website - it looks like a ten year old made it ha.  AhhhH!!
Anyway here is a recipe for mackerel, yum~ I just got a new wok so I was very happy to use it =)

Ingredients
2 yellow potatoes
1/3 sliced onion
green + red kochu
2 mackerel fillets
3 pieces of dashima
1 sliced green onion

Sauce: 3 tb soy sauce, 2 tb gochu ka-ru, 1 tb gochujang, 1 tp minced garlic, dash of pepper, dash of sesame oil

I bought mackerel that was already cleaned / fillet... but make sure you clean it, use a paper towel to dry it and salt it a bit. Put it to the side for now.

I used the wok and heated a small bit of olive oil.  Meanwhile I cut up my vegetables


I didn't have any red ko-chu, but if you do you can add them.  Make sure to clean out the seeds and slice it then.  I had two potatoes which I peeled and sliced, and then sliced about 1/3 an onion.

Mix together the ingredients of the sauce~ "play" with it as you want ~ if you want it more spicy, add more gochujang etc. Leave it to the side for now...



Next I put the dashima and onions on the wok to start cooking.  I put it on low-medium heat


Next I layered on the potatoes




Next layer, the fish~

The green peppers (and red if you have)


Next pour the sauce you made on top



Add the pa / green onion



Then pour enough water so everything is about covered so you can cook it~



I put the lid on and then cooked it on medium heat for about 20-25 minutes



It should start boiling and cooking everything~ yum



Taste it to make sure everything is cooked.... then plate and eat =)

I swear, I am the WORST at plating... i promise it tastes better than it looks =)
