Curry Rice 카레라이스

Ingredients
Chicken
Curry
Vegetables: carrots, onions, potatoes
1 TB minced garlic
Olive oil
2 cup water

Heat up your pan (for my particular pots you should always get the pot hot first, THEN add oil etc).... Then add the minced garlic on medium heat

Then add your chicken... should be in small bite size pieces

Mix it around for about a minute, then add the potatoes and onions... (should also be small bite size pieces)

Mix it around for about a minute...

Add in carrots~

Mix around and cook until it's about 90% cooked... be sure not to overcook it

Take your curry out... Be careful which kind you buy, alot of them are VERY high in sodium... I bought this Japanese one.. Comes with two squares

I only used one half for this recipe. I like how it came in 4 smaller squares... if yours is just one big square, break it up a bit before you put it in the pot

Mix it around and it will start to melt

When the pieces have at least melted, you can pour in the water and mix around

Stir it around, and it will start to thicken and all melt together..... keep it on medium heat for about 8-10 minutes... will start to boil

Then taste to make sure it's all cooked! Pour on top of rice and eat!

I made it again a few days later, but changed it a bit and added chicken drumsticks as well~ same steps as above, just extra chicken:

Kim Chee Ji Gae 김치 찌개

Ingredients
2-3 slices of pork (or you can use spam!)
1 1/2 cup of kimchee
pork marinade: 2 TB kuk kan jan (간장) + 1 chopped scallion + dash of pepper + 1 TP minced garlic
Chopped mushrooms
1 chopped green pepper
2-3 TP goschukaru (고추가루)
Dduk
Sliced onion and mushroom
2 TP olive oil
Sliced soft tofu

I buy the sliced pork from H Mart (but I'm not a big pork person, so you might want to use more).  I soaked it in water to get the blood out for about 30-45 minutes

Also put the dduk to soak in water in the mean time

After the blood is drained, I marinated the pork in the above ingredients

I got my pot ready and heated it up...added some olive oil and the pork mixture (added all the liquid too)...

Add the onions

Cook until it's about half way done, then add the kimchee

Stir it around and then add the 고추가루

Let it stir fry a bit more on medium heat.. make sure to mix it around so it doesn't burn.... leave on heat for about 5-6 minutes while you prepare the other things...

I cubed this soft tofu

Then after you stir fry, add the water

I ended up adding some zucchini randomly

Get it to a good boil and then add the mushrooms (optional) - usually I add enoki but only had cremini

Let it boil for about 1-2 minutes, then drain and add the dduk

When everything is about 90% cooked add the tofu and mix around

Cook for about 2-3 minutes more and you are done!

Jja Jang Myun 짜장면

Ingredients
1/3 pound ground beef (or pork or regular beef)
1 tablespoon minced garlic
Chopped vegetables (onion, carrot, mushroom, zucchini, potato)
2 teaspoon corn or potato starch + 1 TB water
3/4 cup water
1 tablespoon sugar
Noodles
4 tablespoons jja jang

First, I cut up all the vegetables in small cubes that are bite size pieces... use any vegetable you want!

Heat up your wok, and add the minced garlic with a little olive oil

I used ground beef, but you can use pork or other type of beef if you like

Add on top of the garlic and cook~

Cook the beef until it's about half way cooked

In the meantime, start to boil water in a separate pot for the noodles

Go back to your wok while thewater is heating up.  Add the potatoes (you can use sweet potato instead too) and the onions

Cook for about 3-4 minutes... make sure to stir it around so nothing sticks to the pan

Add the rest of your vegetables

Mix it around and make sure it doesn't stick!

I ended up adding mushrooms too

Cook until the vegetables are cooked... then add the jja jang

Then add 3/4 cup of water and mix it around. Make sure it doesn't burn

Mix together the starch and 1 TB of water in a separate small bowl

Then pour it into the wok + 1 TB of sugar

Mix everything around.  The water in the other pot should be boiling so add your noodles and cook them according to the directions.  I used these

Make sure to keep stirring the wok occasionally while the noodles cook... taste the sauce and adjust to your liking! I ended up adding a splash more water and corn starch.... you might like yours sweeter and add more sugar etc.... so taste and adjust!

Then plate the noodles and put the sauce on top!
